INGREDIENTS
  • 2 oz SWOL Añejo Tequila (the hero: aged and oaky, it carries the drink where a blanco would taste thin)
  • Handful of fresh mint (about 8 to 10 leaves; look for bright, unbruised leaves)
  • 3/4 oz fresh lemon juice (fresh only, bottled tastes flat)
  • 1/2 oz simple syrup (adjust to taste; see the fresh vs syrup note below)
  • Crushed ice, to fill

HOW TO PREPARE
  1. Add the mint, lemon juice and simple syrup to a shaker.
  2. Muddle gently, just enough to release the mint oils (do not shred the leaves).
  3. Add the SWOL Añejo and a scoop of ice.
  4. Shake well until cold, about 10 to 15 seconds.
  5. Strain over fresh crushed ice in a highball glass.
  6. Slap a mint sprig between your palms to wake up the aroma, then garnish.

Muddle gently (the one mistake to avoid)
