INGREDIENTS
  • 2 cups SWOL Añejo Tequila, the hero; its barrel-aged, oaky character stands up to guava and Aperol where a blanco would get lost.
  • 1.5 cups guava juice or nectar, the star; thick guava nectar gives body, thinner guava juice gives a lighter pour.
  • 1 cup fresh lime juice, roughly 8 to 10 limes; fresh only, bottled tastes flat.
  • 1 cup Aperol, for bittersweet orange and color.
  • 0.5 cup orgeat, almond syrup for a silky, nutty backbone.
  • 1 cup water, to soften the batch to drinking strength.
  • Garnish: dehydrated lime wheels.
HOW TO PREPARE
  1. Combine the tequila, guava juice, lime juice, Aperol, orgeat and water in a large bowl or pitcher and stir well.
  2. Transfer to flip-top glass jars or a sealed pitcher and refrigerate for at least a few hours, ideally overnight, so the flavors bloom.
  3. When ready to serve, fill a rocks glass with fresh crushed ice.
  4. Pour the chilled batch over the ice.
  5. Garnish with a dehydrated lime wheel and serve.

Choosing your guava juice

Guava nectar is thicker and sweeter and makes a rounder cocktail; if you use it, taste and add a splash more lime. Clear or blended guava juice is lighter and lets the Aperol show. Pink guava reads sweeter and more floral than white guava. If you only have guava puree, cut it with water about half and half.

To pour one instead of a batch: 2 oz SWOL Añejo, 1.5 oz guava juice, 1 oz Aperol, 1 oz fresh lime, 0.5 oz orgeat, 1 oz water. Add everything to a shaker with ice, shake, and strain over crushed ice in a rocks glass.

Guava margarita variation

Prefer a true guava margarita? Drop the Aperol and orgeat, add 0.75 oz orange liqueur (such as Cointreau) per serving, keep the guava and lime, and rim the glass with salt or Tajín. Same SWOL Añejo base, classic margarita build.
