Roll your cranberries before muddling
Fresh cranberries are firm and waxy. Rolling them under your palm on the counter breaks down the skins so they burst cleanly when muddled, releasing deeper color and more tart flavor into the drink. Skip this and you get pale, watery muddling. Two or three firm rolls per berry is enough.
Fresh cranberry juice vs bottled
Use 100% cranberry juice, not sweetened cranberry cocktail. The unsweetened juice keeps the drink tart and lets you control sweetness with the syrup. If all you have is cranberry cocktail, cut the simple syrup in half so the drink does not turn cloying.
Smash vs cranberry margarita
A cranberry margarita adds orange liqueur and leans citrus-forward with a salted rim. This smash skips the liqueur and salt, muddling whole cranberries for a fresher, more rustic drink that shows off the tequila. Want the margarita instead? Add 0.5 oz orange liqueur, swap the rocks glass for a salted rim, and shake.
The flaming rosemary garnish (do it safely)
A briefly torched rosemary sprig releases a fragrant, piney smoke that makes this drink unforgettable at a holiday table. Hold the sprig over a plate, pass a lighter under the tip for a second or two until it smokes, then blow it out and lay it across the glass. Keep it away from hair, sleeves and anything flammable, and never torch it directly over the drink.
Batch it for the holidays (pitcher method)
For a crowd, multiply the tequila, cranberry juice, lime and syrup by your guest count and stir in a pitcher with a handful of muddled cranberries. Keep it chilled, then pour over crushed ice to order and add fresh rosemary. Shaking each serving keeps the texture right, but a stirred pitcher is fine for easy pouring at a party.
