This maple syrup cocktail is winter in a coupe glass. Real maple syrup stands in for the usual agave, wrapping SWOL Añejo and bright lemon in cozy, caramel warmth, while a dusting of nutmeg adds instant holiday aroma. A dry shake whips the egg white into a frothy, velvety top that makes it look like a craft-bar special. INGREDIENTS
  • 2 oz SWOL Añejo Tequila (the hero: oak and vanilla meet maple beautifully)
  • 1 oz fresh lemon juice (bright acidity to balance the maple)
  • 3/4 oz pure maple syrup (real maple, not pancake syrup; Grade A dark for deeper flavor)
  • 1 egg white, or aquafaba (for the frothy top)
  • Dash of ground nutmeg (fresh-grated is best, for holiday aroma)
  • Nutmeg or cinnamon dust, to garnish
HOW TO PREPARE
  1. Add all ingredients to a shaker and dry shake with no ice for 10 to 15 seconds to build the foam.
  2. Add ice and shake again until well chilled.
  3. Strain into a chilled coupe glass.
  4. Dust the frothy top with grated nutmeg (and a little cinnamon if you like).

Reach for pure maple syrup, not pancake syrup, which is mostly corn syrup and artificial flavor. Grade A dark (once called Grade B) has the deepest, most robust maple flavor and stands up best to the tequila and lemon. Grade A amber is lighter and more delicate if you want a subtler drink. A little goes a long way, so start with 0.75 oz and adjust.

Maple vs agave vs simple syrup

Maple is what makes this a winter cocktail rather than a standard sour. It brings caramel and warm spice that agave and plain simple syrup cannot.
